Overview

This 6-month master's internship at INRAE (UMET Joint Research Unit in Villeneuve-d’Ascq) investigates the fouling mechanisms of hybrid plant-dairy protein beverages during thermal treatments. The selected student will study the thermal denaturation kinetics of pea and whey protein mixtures using a pilot-scale plate heat exchanger. The work aims to support sustainable transitions in the agri-food industry by optimizing hygienic performance and reducing environmental footprints. Candidates are expected to conduct independent laboratory experiments, analyze protein formulations, and communicate findings effectively.

What you'll do

  • Study the thermal denaturation kinetics of pea and whey protein mixtures
  • Investigate how formulation parameters such as protein concentration, ratios, and calcium levels affect fouling formation
  • Operate a pilot-scale plate heat exchanger to simulate industrial thermal treatments
  • Characterize fouling deposit properties and protein solutions using analytical techniques
  • Work independently in the laboratory to generate reproducible experimental data and write technical reports
