Overview

This PhD position offers the opportunity to investigate the structural and functional properties of a newly identified non-specific lipase in hazelnut seeds, contributing to understanding the biochemical mechanisms behind hazelnut rancidity. The project involves collaboration between the time-resolved serial crystallography team at ESRF’s ID29 beamline, the University of Turin’s Department of Science and Pharmaceutical Technology, and Soremartec (Ferrero). Using a combination of biophysical, biochemical, and time-resolved crystallography techniques, the research aims to elucidate the molecular mechanisms driving rancidity. The successful candidate will be enrolled in the University of Turin’s doctoral programme and conduct research at the ESRF in Grenoble, France.
